5-6 medium ripe Roma tomatoes (or 3 large beefsteak tomatoes), deseeded and finely diced
1/2 medium white onion, finely diced
1-2 jalapeños, deseeded and minced (adjust to preferred heat)
2 cloves garlic, minced
1/2 cup fresh cilantro, finely chopped
Juice of 1 large lime (about 2 tablespoons)

Instructions
Step 1: Wash all produce thoroughly under cold water. Ensure tomatoes, onions, jalapeños, garlic, and cilantro are clean.
Step 2: Dice the tomatoes. Quarter them, remove as much of the watery seed core as possible, then finely dice the tomato flesh. Place the diced tomatoes into a large mixing bowl.
Step 3: Finely dice the white onion. For a milder flavor, you can soak the diced onion in cold water for 10-15 minutes, then drain thoroughly before adding to the bowl with the tomatoes.
Step 4: Prepare the jalapeño. Remove the stem. For mild salsa, slice it in half lengthwise and carefully scrape out all seeds and white membranes with a spoon. For more heat, leave some or all seeds in. Finely mince the jalapeño and add it to the bowl. Remember to wear gloves when handling hot peppers.
Step 5: Mince the garlic cloves. A garlic press can be used for speed and consistency. Add the minced garlic to the bowl with the other vegetables.
Step 6: Finely chop the fresh cilantro. Be generous with this fragrant herb. Add the chopped cilantro to the bowl.
Step 7: Add the juice of one large, fresh lime to the mixture. Lime juice adds a bright, zesty flavor and helps to preserve the freshness of the salsa.
Step 8: Season the salsa with 1/2 teaspoon of salt and 1/4 teaspoon of freshly ground black pepper. Start with these amounts and adjust to your personal taste.
Step 9: Gently stir all the ingredients together until they are well combined. Taste the salsa and adjust seasonings as needed, perhaps adding more lime, salt, or jalapeño for your ideal flavor profile.
Step 10: For the best flavor, cover the bowl with plastic wrap and refrigerate the fresh salsa for at least 30 minutes, or ideally 2-4 hours, to allow the flavors to meld and deepen. This resting period is crucial for a richer, more cohesive taste.
