1 large loaf of Brioche or Challah bread, cubed
8 large eggs
2 cups whole milk
1/2 cup heavy cream
3/4 cup granulated sugar
2 tablespoons vanilla extract
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup all-purpose flour (for topping)
1/2 cup brown sugar (for topping)
1 teaspoon cinnamon (for topping)
1/2 cup cold unsalted butter, cubed

Instructions

Step 1: Grease a 9x13 inch baking dish with butter or non-stick spray and place the cubed bread evenly inside.
Step 2: In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla, 1 tablespoon cinnamon, nutmeg, and salt until smooth.
Step 3: Pour the egg mixture over the bread cubes, ensuring all pieces are well-coated. Use a spatula to press down if needed.
Step 4: In a separate small bowl, combine the flour, brown sugar, and 1 teaspoon cinnamon. Cut in the cold butter using a pastry cutter or fork until crumbly.
Step 5: Sprinkle the crumble mixture over the soaked bread. Cover the dish with foil or plastic wrap and refrigerate for 4-12 hours.
Step 6: Preheat your oven to 350°F (175°C). Remove the casserole from the fridge and bake, uncovered, for 45-50 minutes until golden and set.
Step 7: Let the casserole cool for 5 minutes before serving with maple syrup or powdered sugar.

Notes

For best results, use bread that is a day or two old. If using fresh bread, toast the cubes in a low oven for 10 minutes first.
