Ingredients
1 lb fresh strawberries, hulled and sliced
1 pint fresh blueberries
1 pint fresh raspberries
4 oz crumbled feta cheese
1/4 cup fresh mint leaves, chopped
For the Honey-Lime Dressing:
3 tablespoons olive oil
2 tablespoons fresh lime juice (from 1-2 limes)
1 tablespoon honey
1/2 teaspoon lime zest
Pinch of salt
Pinch of black pepper
Instructions
Step 1: Prepare the berries. Gently rinse all the fresh strawberries, blueberries, and raspberries under cool water. Pat them thoroughly dry with a paper towel. Hull the strawberries and slice them into bite-sized pieces.
Step 2: Make the honey-lime dressing. In a small bowl, whisk together the olive oil, fresh lime juice, honey, lime zest, a pinch of salt, and a pinch of black pepper until well combined and emulsified. Taste and adjust seasoning if needed.
Step 3: Combine the salad ingredients. In a large serving bowl, gently combine the sliced strawberries, blueberries, and raspberries.
Step 4: Add the feta and mint. Sprinkle the crumbled feta cheese and chopped fresh mint leaves over the berries.
Step 5: Dress the salad. Drizzle the honey-lime dressing over the berry and feta mixture. Gently toss the salad to ensure all ingredients are lightly coated with the dressing. Be careful not to over-mix.
Step 6: Serve immediately or chill. This salad is best served fresh. If preparing ahead, combine and dress just before serving.
Notes
For the best flavor and texture, use fresh, ripe berries and block feta cheese that you crumble yourself. If making ahead, store the dressing and salad components separately and combine just before serving to keep the berries from getting soggy. A sprinkle of toasted pecans or walnuts can add a delightful crunch.
