1 pint fresh blueberries
1 pint fresh raspberries
4 oz crumbled feta cheese
1/4 cup fresh mint leaves, chopped
For the Honey-Lime Dressing:
3 tablespoons olive oil
2 tablespoons fresh lime juice (from 1-2 limes)
1 tablespoon honey
1/2 teaspoon lime zest
Pinch of salt
Pinch of black pepper

Instructions

Step 1: Prepare the berries. Gently rinse all the fresh strawberries, blueberries, and raspberries under cool water. Pat them thoroughly dry with a paper towel. Hull the strawberries and slice them into bite-sized pieces.
Step 2: Make the honey-lime dressing. In a small bowl, whisk together the olive oil, fresh lime juice, honey, lime zest, a pinch of salt, and a pinch of black pepper until well combined and emulsified. Taste and adjust seasoning if needed.
Step 3: Combine the salad ingredients. In a large serving bowl, gently combine the sliced strawberries, blueberries, and raspberries.
Step 4: Add the feta and mint. Sprinkle the crumbled feta cheese and chopped fresh mint leaves over the berries.
Step 5: Dress the salad. Drizzle the honey-lime dressing over the berry and feta mixture. Gently toss the salad to ensure all ingredients are lightly coated with the dressing. Be careful not to over-mix.
