1/8 teaspoon ground cloves
1/2 teaspoon salt
1 cup pumpkin puree (100% pure, not pie filling)
1 cup buttermilk
2 large eggs
4 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract
Vegetable oil or butter for greasing the griddle

Instructions

Step 1: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt until well combined.
Step 2: In a separate medium bowl, whisk together the pumpkin puree, buttermilk, eggs, melted butter, and vanilla extract until smooth.
Step 3: Pour the wet ingredients into the dry ingredients. Mix with a whisk or spatula until just combined. Do not overmix; a few lumps are fine.
Step 4: Heat a lightly oiled griddle or large non-stick pan over medium-low heat. Ensure the griddle is hot enough by sprinkling a few drops of water; they should sizzle and evaporate immediately.
Step 5: Pour 1/4 to 1/3 cup of batter per pancake onto the hot griddle, leaving space between them.
Step 6: Cook for 2-3 minutes per side, or until golden brown and bubbles appear on the surface and the edges look set. Flip carefully and cook for another 2-3 minutes until cooked through.
Step 7: Transfer cooked pancakes to a plate and keep warm in a low oven (around 200°F / 95°C) while you cook the remaining batter. Serve immediately with your favorite toppings.
