A quick and incredibly delicious flatbread pizza featuring sweet roasted red peppers, tangy goat cheese, and fresh basil on a crispy flatbread base. Perfect for busy weeknights!

Ingredients

2 pieces of naan bread or other flatbread (approx. 8-10 inches each)
1 tablespoon olive oil
1/4 cup marinara sauce (your favorite brand)
1 cup shredded mozzarella cheese, divided
1/2 cup jarred roasted red peppers, well drained and patted dry, cut into strips
2 ounces fresh goat cheese, crumbled
Fresh basil leaves, for garnish
Optional: balsamic glaze, for drizzling

Instructions

Step 1: Preheat your oven to 400°F (200°C). Place a baking sheet or pizza stone in the oven while it preheats to ensure a crispy crust.
Step 2: Lay the flatbreads on a clean surface. Gently brush the top surface of each flatbread with olive oil.
Step 3: Spread 2 tablespoons of marinara sauce evenly over each flatbread, leaving a small border around the edges for the crust.
Step 4: Sprinkle half (1/2 cup total) of the shredded mozzarella cheese over the sauce on both flatbreads.
Step 5: Evenly distribute the roasted red pepper strips over the mozzarella on each flatbread.
Step 6: Crumble the fresh goat cheese over the red peppers.
Step 7: Sprinkle the remaining half (1/2 cup total) of the shredded mozzarella cheese on top of the goat cheese.
Step 8: Carefully transfer the topped flatbreads to the preheated baking sheet or pizza stone in the oven.
Step 9: Bake for 8-12 minutes, or until the cheese is melted and bubbly, and the crust is golden brown and slightly crispy. Cooking time may vary depending on your oven and the thickness of your flatbread.
Step 10: Once baked, carefully remove the flatbread pizzas from the oven. Garnish immediately with fresh basil leaves. If desired, drizzle with balsamic glaze.
Step 11: Let the pizzas cool for 1-2 minutes before slicing into wedges and serving hot.

Notes

For an extra crispy crust, pre-bake the flatbread for 2-3 minutes before adding toppings. Feel free to customize with your favorite veggies or a sprinkle of red pepper flakes for a kick!
