Ingredients
1 cup dried elderberries (Sambucus nigra)
3 cups filtered water
1 cinnamon stick
1 tablespoon fresh ginger, grated
1/2 teaspoon whole cloves
1 cup raw honey (local preferred)
Instructions
Step 1: Combine the dried elderberries, filtered water, cinnamon stick, grated ginger, and cloves in a medium saucepan.
Step 2: Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to low.
Step 3: Simmer the mixture uncovered for 45 to 60 minutes, or until the liquid has reduced by approximately half.
Step 4: Remove the pan from the heat and let it sit for 10 minutes to cool slightly.
Step 5: Carefully strain the liquid through a fine-mesh sieve or a piece of cheesecloth into a glass bowl, pressing the berries firmly with a spoon to extract all the juice. Discard the berry solids.
Step 6: Allow the strained liquid to cool until it is lukewarm (not hot), then stir in the raw honey until completely dissolved.
Step 7: Pour the finished syrup into a clean glass jar and store it in the refrigerator for up to 2 months.
Notes
Always wait for the liquid to cool to lukewarm before adding raw honey to preserve its beneficial properties. Do not give honey to infants under one year old.
