A delicious and healthy dinner option featuring fresh zucchini hollowed out and stuffed with a savory protein filling, topped with melted cheese. One of the most versatile and easy zucchini recipes for any night of the week.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

4 medium zucchinis
1 lb ground turkey or beef
1/2 cup finely chopped onion
2 cloves garlic, minced
1 cup marinara sauce
1 tsp Italian seasoning
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish

Instructions

Step 1: Preheat your oven to 400°F (200°C). Grease a large 9x13 baking dish lightly with olive oil.
Step 2: Slice the zucchinis in half lengthwise. Use a spoon to scoop out the centers, leaving about 1/4-inch shell. Finely chop the removed zucchini flesh and set aside.
Step 3: In a large skillet, cook the ground meat over medium-high heat until browned. Drain any excess fat.
Step 4: Add the chopped onion, minced garlic, and the reserved zucchini flesh to the skillet. Sauté for 5 minutes until vegetables are tender.
Step 5: Stir in the marinara sauce, Italian seasoning, salt, and pepper. Simmer for another 2-3 minutes. This flavorful base is common in many easy zucchini recipes.
Step 6: Arrange the zucchini shells in the prepared baking dish. Spoon the meat mixture into each shell, pressing down slightly.
Step 7: Cover the dish with aluminum foil and bake for 20 minutes.
Step 8: Remove the foil and sprinkle both mozzarella and parmesan cheese over the boats. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is bubbly and slightly browned.
Step 9: Garnish with fresh parsley before serving. Enjoy one of the best easy zucchini recipes with your family!

Notes

For a vegetarian version of these easy zucchini recipes, substitute the ground meat with cooked lentils or a plant-based crumble.
