Ingredients
1 ½ cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 ¼ cups water
2 large eggs
¼ cup vegetable oil (or canola oil)
Instructions
Step 1: Preheat your waffle iron according to the manufacturer's instructions. Ensure it is fully heated before adding batter.
Step 2: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Step 3: In a separate medium bowl, whisk together the water, eggs, and vegetable oil until thoroughly blended.
Step 4: Pour the wet ingredients into the dry ingredients. Mix with a whisk or spatula until just combined. A few small lumps are normal; do not overmix, as this can lead to tough waffles.
Step 5: Lightly grease your preheated waffle iron with cooking spray or a small amount of oil, even if it's non-stick.
Step 6: Pour approximately ½ to ¾ cup of batter onto the center of the hot waffle iron (the amount will vary based on your waffle iron's size). Close the lid and cook for 3-5 minutes, or until the waffle is golden brown and crisp, and steam is no longer escaping.
Step 7: Carefully remove the cooked waffle from the iron and place it on a wire rack to keep it crisp while you cook the remaining batter.
Step 8: Serve the waffles warm with your favorite toppings, such as maple syrup, fresh berries, or dairy-free whipped cream.
Notes
For best results, do not overmix the batter; a few lumps are fine. Ensure your waffle iron is fully preheated for crispy waffles. Cooked waffles can be kept warm in a 200°F (93°C) oven, or frozen for up to 1 month and reheated in a toaster.
