Ingredients
1 pound rotini pasta
1 cup mayonnaise
1/2 cup sour cream (or Greek yogurt)
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon granulated sugar
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and freshly ground black pepper to taste
2 cups cherry tomatoes, halved
1 large cucumber, diced
1 red bell pepper, diced
1/2 red onion, finely diced
4 ounces cheddar cheese, cubed or shredded
1/4 cup fresh parsley, chopped
Instructions
Step 1: Cook the pasta according to package directions until al dente. Drain well and rinse under cold water to stop the cooking process and prevent sticking. Set aside to cool completely.
Step 2: While the pasta cools, prepare the dressing. In a large bowl, whisk together the mayonnaise, sour cream, red wine vinegar, Dijon mustard, granulated sugar, garlic powder, onion powder, salt, and black pepper until smooth and well combined. Taste and adjust seasonings as needed.
Step 3: Add the cooled pasta, halved cherry tomatoes, diced cucumber, diced red bell pepper, finely diced red onion, and cubed cheddar cheese to the bowl with the dressing.
Step 4: Gently toss all the ingredients together until the pasta and vegetables are evenly coated with the dressing.
Step 5: Stir in the fresh chopped parsley.
Step 6: Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld and for the salad to chill thoroughly. For best results, chill for 2-4 hours, or even overnight.
Step 7: Before serving, give the pasta salad another good stir. If it seems a little dry, you can add a tablespoon or two of milk or a little more mayonnaise to loosen it up. Serve cold and enjoy!
Notes
For best results, allow the pasta salad to chill for at least 2-4 hours, or even overnight, to allow the flavors to fully develop. If desired, soak the diced red onion in cold water for 10-15 minutes before adding to mellow its flavor. You can lighten the dressing by substituting half of the mayonnaise with Greek yogurt.
