Instructions

Step 1: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until thoroughly combined and no lumps remain.
Step 2: Transfer the dry pancake mix to an airtight container. Label it with the date and basic instructions (1 cup mix + 1 egg + 1 cup milk + 2 tbsp melted fat per batch). Store in a cool, dry place for up to 3-4 months.
Step 3: To prepare pancakes: Measure 1 cup of the homemade easy pancake mix into a medium bowl.
Step 4: Add the milk, egg, and melted butter or oil to the mix.
Step 5: Whisk the wet ingredients into the dry pancake mix until just combined. A few small lumps are normal; do not overmix, as this can lead to tough pancakes.
