Ingredients
4 boneless, skinless chicken breasts (about 1.5 - 2 lbs total)
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
6 slices thick-cut bacon
1/2 cup BBQ sauce (your favorite brand)
1 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
Optional: Fresh chopped cilantro or green onions for garnish
Instructions
Step 1: Pat the chicken breasts dry and pound them to an even 1/2 to 3/4-inch thickness. Season both sides with salt, pepper, and garlic powder.
Step 2: In a large oven-safe skillet, cook the bacon over medium-high heat until crispy. Remove bacon, drain on paper towels, and crumble. Drain most bacon grease from skillet, leaving about 1 tablespoon.
Step 3: Sear the seasoned chicken breasts in the skillet for 3-4 minutes per side, until golden brown. Remove chicken and set aside.
Step 4: Preheat oven to 375°F (190°C). Return seared chicken to the skillet or transfer to a baking dish. Spread barbecue sauce evenly over each chicken breast.
Step 5: Sprinkle crumbled bacon over the barbecue sauce, then top generously with shredded Monterey Jack and cheddar cheeses.
Step 6: Bake for 15-20 minutes, or until chicken is cooked through (165°F/74°C) and cheese is bubbly and golden. Broil for 1-2 minutes for extra crispiness, if desired.
Step 7: Let the Monterey Chicken rest for 5 minutes before serving. Garnish with fresh cilantro or green onions, if using.
Notes
For best results, use freshly shredded cheeses as they melt more smoothly than pre-shredded varieties. Don't overcrowd the pan when searing chicken to ensure a good crust. Adjust BBQ sauce to your preferred sweetness/tanginess.
