Ingredients
1 (18.3 oz) box fudge brownie mix (plus ingredients called for on box, usually oil, water, eggs)
1/4 cup all-purpose flour (optional, for chewier cookies)
2 large eggs
1/3 cup vegetable oil (or melted butter for richer flavor)
1 teaspoon vanilla extract (optional, enhances flavor)
1/2 cup chocolate chips (optional, for extra chocolatey goodness)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: In a large mixing bowl, combine the brownie mix, flour (if using), eggs, vegetable oil (or melted butter), and vanilla extract (if using).
Step 3: Mix with a spoon or spatula until just combined. Be careful not to overmix, as this can lead to tougher cookies. The dough will be thick and sticky.
Step 4: If desired, fold in the chocolate chips.
Step 5: Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. The dough will be sticky, so a small cookie scoop or two spoons can be helpful.
Step 6: Bake for 10-12 minutes, or until the edges are set and the centers still look slightly soft and fudgy. Do not overbake!
Step 7: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This allows them to set up and prevents them from breaking.
Step 8: Serve warm or at room temperature and enjoy your delicious Easy Brownie Mix Cookies!
Notes
For an extra gourmet touch, sprinkle a pinch of flaky sea salt on top of the cookies immediately after they come out of the oven. This enhances the chocolate flavor beautifully.
