5 cups fresh blueberries (or frozen, unthawed)
1/2 cup granulated sugar (for filling)
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
1 cup old-fashioned rolled oats
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 cup granulated sugar (for topping)
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into cubes

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch or 9x9 inch baking dish.
Step 2: In a large bowl, gently combine the blueberries, 1/2 cup granulated sugar, cornstarch, and lemon juice. Mix until the blueberries are evenly coated.
Step 3: Pour the blueberry mixture into the prepared baking dish, spreading it evenly.
Step 4: In a separate medium bowl, combine the rolled oats, all-purpose flour, light brown sugar, 1/4 cup granulated sugar, ground cinnamon, and salt. Whisk to combine.
Step 5: Add the cold, cubed unsalted butter to the dry topping ingredients. Using your fingertips, a pastry blender, or a fork, work the butter into the oat mixture until it resembles coarse crumbs with some larger pea-sized pieces.
Step 6: Sprinkle the oat topping evenly over the blueberry filling in the baking dish.
Step 7: Bake for 35-45 minutes, or until the topping is golden brown and the blueberry filling is bubbling vigorously around the edges.
Step 8: Remove from the oven and let cool for at least 15-20 minutes before serving. This allows the filling to set slightly.

Notes

For best results, use ripe, in-season blueberries. If using frozen blueberries, do not thaw them before mixing; simply toss them with the other filling ingredients while frozen to prevent a watery texture. Serve warm with vanilla ice cream or whipped cream.
