Ingredients
1 box (15.25 oz) white cake mix
Ingredients required by the cake mix box (usually water, oil, and egg whites)
1 package (3 oz) strawberry gelatin
1 package (3 oz) lime or berry blue gelatin
2 cups boiling water (divided)
1 cup cold water (divided)
1 tub (8 oz) frozen whipped topping, thawed
Pastel sprinkles or jelly beans for garnish
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
Step 2: Prepare the white cake mix according to the package directions. Pour the batter into the prepared pan and bake as directed until a toothpick comes out clean.
Step 3: Allow the cake to cool for about 10-15 minutes. While still warm, use the handle of a wooden spoon to poke holes across the entire surface of the cake, spaced about 1 inch apart.
Step 4: In two separate small bowls, dissolve each flavor of gelatin in 1 cup of boiling water. Once dissolved, stir 1/2 cup of cold water into each bowl.
Step 5: Carefully pour or spoon the gelatin liquids into the holes of the cake, alternating colors to create a pastel marble effect.
Step 6: Cover the cake with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the gelatin to set and the cake to moisten.
Step 7: Once chilled, spread the thawed whipped topping evenly over the top of the cake.
Step 8: Garnish with pastel sprinkles or festive Easter candies just before serving. Slice and enjoy your easter poke cake recipe!
Notes
Ensure the cake is still slightly warm when poking holes to help the gelatin absorb better. Do not poke all the way to the bottom to avoid a soggy base.
