Ingredients
12 oz (340g) high-quality white chocolate (or milk/dark)
1 cup (240g) unsalted pistachio paste (100% pistachios)
1/2 cup (60g) confectioners' sugar
3 tbsp unsalted butter, melted, divided
4 oz (115g) knafeh dough (shredded phyllo)
Instructions
Step 1: Finely chop the knafeh dough into small pieces. In a non-stick pan, melt 2 tablespoons of butter over medium heat. Add the chopped knafeh and toast, stirring frequently, until golden brown and crispy (about 5-7 minutes). Remove from heat and spread on a plate to cool completely.
Step 2: In a bowl, combine the pistachio paste, remaining 1 tablespoon of melted butter, and confectioners' sugar. Mix well until smooth and creamy. Fold in the cooled, toasted knafeh until evenly distributed.
Step 3: Melt the white chocolate using a double boiler or microwave in 30-second intervals, stirring until smooth. If tempering, follow your preferred method for a shiny finish.
Step 4: Pour about one-third of the melted chocolate into your prepared chocolate bar mold(s), ensuring the bottom and sides are fully coated. Tap gently to remove air bubbles. Refrigerate for 5-10 minutes, or until set.
Step 5: Once the base layer is firm, spoon the pistachio-knafeh filling evenly over the set chocolate. Gently spread it, leaving a small border around the edges.
Step 6: Pour the remaining melted chocolate over the filling, ensuring it completely covers the filling and seals the bar. Tap the mold gently again to smooth the top and release any air bubbles.
