Ingredients
1 lb smoked chicken or turkey sausage, sliced into rounds
2 medium zucchini, sliced into half-moons
1 large yellow squash, sliced into half-moons
1 red bell pepper, chopped into 1-inch pieces
1 cup cherry tomatoes
2 ears of fresh corn, kernels cut off the cob
3 tbsp extra virgin olive oil
1 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp sea salt
1/4 tsp cracked black pepper
1/4 cup fresh basil leaves, torn
Instructions
Step 1: Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, combine the sliced sausage, zucchini, yellow squash, bell pepper, cherry tomatoes, and corn kernels.
Step 3: Drizzle the olive oil over the mixture and sprinkle with oregano, garlic powder, salt, and pepper. Toss well until everything is evenly coated.
Step 4: Spread the mixture in a single layer on the prepared baking sheet, ensuring the pan is not overcrowded to allow for proper roasting.
Step 5: Roast in the preheated oven for 20-25 minutes, tossing halfway through, until the vegetables are tender and slightly caramelized at the edges.
Step 6: Remove from the oven and garnish immediately with fresh torn basil before serving warm.
Notes
For a kick of heat, add a pinch of red pepper flakes before roasting. You can also swap the basil for fresh cilantro and add a squeeze of lime at the end.
