1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 red bell pepper, cored, seeded, and cut into 1-inch pieces
1 yellow bell pepper, cored, seeded, and cut into 1-inch pieces
1 zucchini, trimmed and cut into 1-inch thick half-moons
1 red onion, cut into 1-inch pieces
1 pint cherry tomatoes
1/4 cup olive oil
3 tablespoons fresh lemon juice (from 1-2 lemons)
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh oregano, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Wooden or metal skewers (if using wooden, soak for 30 minutes)

Instructions

Step 1: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, chopped rosemary, thyme, oregano, salt, and pepper to create the marinade.
Step 2: Add the chicken pieces to the marinade, tossing to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for best flavor. If time allows, marinating for 1 hour is ideal.
Step 3: While the chicken is marinating, prepare your vegetables by cutting them into uniform 1-inch pieces. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Step 4: Once the chicken has marinated, thread the chicken and vegetables alternately onto the skewers. Try to create a visually appealing pattern with the different colors.
Step 5: Preheat your grill to medium-high heat (about 400-450°F or 200-230°C). Lightly oil the grill grates to prevent sticking.
Step 6: Place the skewers on the preheated grill. Cook for 12-16 minutes total, turning them every 3-4 minutes, until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the vegetables are tender-crisp with char marks.
Step 7: Remove the skewers from the grill and let them rest for 5 minutes before serving. This allows the chicken juices to redistribute, ensuring maximum flavor and tenderness.
Step 8: Serve immediately with your favorite sides, such as quinoa, rice, or a fresh green salad.

Notes

For best results, do not overcrowd the grill. Cook in batches if necessary. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan or microwave.
