6 large eggs (preferably 1 week old)
3 tablespoons high-quality mayonnaise
1 teaspoon yellow mustard
1 teaspoon apple cider vinegar
1/8 teaspoon salt
1/8 teaspoon black pepper
Smoked paprika for garnish
Fresh chives for garnish (optional)

Instructions

Step 1: Place eggs in a single layer in a saucepan and cover with water. Bring to a boil.
Step 2: Remove from heat, cover, and let sit for 12 minutes.
Step 3: Transfer eggs to an ice bath for 10 minutes, then peel carefully.
Step 4: Slice eggs in half lengthwise and scoop yolks into a small bowl.
Step 5: Mash yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth.
Step 6: Pipe or spoon the mixture back into the egg white halves and sprinkle with paprika.

Notes

For best results, use eggs that have been in the refrigerator for about a week to make peeling easier.
