Ingredients
12 large eggs
1/2 cup high-quality mayonnaise
2 teaspoons Dijon mustard
1 teaspoon yellow mustard
1 tablespoon apple cider vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika (for garnish)
Optional: Fresh chives for garnish
Instructions
Step 1: Place the eggs in a large pot and cover with cool water by about an inch.
Step 2: Bring the water to a rolling boil over high heat.
Step 3: Once boiling, remove from heat, cover with a lid, and let sit for 12 minutes.
Step 4: Prepare an ice bath while the eggs sit. Transfer cooked eggs to the ice bath for 10 minutes.
Step 5: Gently crack and peel the eggs under running water.
Step 6: Slice eggs in half lengthwise and carefully remove the yolks into a mixing bowl.
Step 7: Mash yolks with a fork or sieve, then stir in mayo, both mustards, vinegar, salt, and pepper until smooth.
Step 8: Pipe or spoon the yolk mixture back into the egg white cavities.
Step 9: Garnish with a sprinkle of smoked paprika and fresh chives before serving.
Notes
For the best results, use eggs that have been in the fridge for a week, as they peel more easily than very fresh eggs.
