Instructions
Step 1: In a large mixing bowl, combine the rolled oats, ground flaxseed, and salt. Stir well to ensure they are evenly distributed.
Step 2: Add the natural creamy peanut butter, honey (or maple syrup), and vanilla extract to the bowl with the dry ingredients.
Step 3: Mix all ingredients together thoroughly until a thick, cohesive "dough" forms. You can use a sturdy spatula or your hands. If the mixture seems too dry, add a tiny bit more peanut butter or honey, one teaspoon at a time, until it reaches a rollable consistency.
Step 4: Fold in the mini chocolate chips and any other desired add-ins, ensuring they are evenly distributed throughout the mixture.
Step 5: Take small portions of the mixture, about 1 to 1.5 tablespoons each, and roll them between your palms to form compact balls. Place the rolled bites on a baking sheet lined with parchment paper.
Step 6: Once all the mixture has been rolled, place the baking sheet into the refrigerator for at least 30 minutes. This chilling time allows the ingredients to firm up, making the bites less sticky and more pleasant to eat. Store finished bites in an airtight container in the refrigerator.
Notes
For best results, use natural creamy peanut butter (just peanuts and salt). If the mixture is too sticky, chill it for 10-15 minutes before rolling. These bites freeze wonderfully for up to 3 months; thaw briefly before enjoying. Feel free to customize with dried fruits, nuts, or seeds!
