Ingredients
1 can (15 oz) chickpeas, rinsed and thoroughly dried
1.5 tablespoons extra virgin olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon sea salt
1/4 cup freshly grated Parmesan cheese
1/4 teaspoon cracked black pepper
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone mat.
Step 2: Rinse the chickpeas under cold water and drain well. Place them on a clean kitchen towel and pat them until they are completely dry to the touch.
Step 3: In a medium bowl, toss the dried chickpeas with olive oil, garlic powder, onion powder, and sea salt until evenly coated.
Step 4: Spread the chickpeas in a single layer on the prepared baking sheet, ensuring they aren't crowded.
Step 5: Roast for 20 minutes, then remove the tray and shake it to rotate the chickpeas for even browning.
Step 6: Roast for another 10-15 minutes until they are golden brown and crunchy.
Step 7: Sprinkle the Parmesan cheese and black pepper over the hot chickpeas. Toss lightly and return to the oven for 2 minutes.
Step 8: Remove from the oven and let them cool for at least 5-10 minutes, as they will continue to crisp up while cooling.
Notes
Ensure chickpeas are very dry before roasting to get maximum crunch. Store in an airtight container at room temperature for up to 3 days.
