1 1/2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup extra virgin olive oil
2 large eggs
1/2 cup milk (dairy or non-dairy)
1 tablespoon lemon zest (from 1-2 lemons)
2 tablespoons fresh lemon juice
1 cup pitted and finely chopped Medjool dates
1/2 cup shelled pistachios, roughly chopped
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a 9x5 inch loaf pan, or line with parchment paper.
Step 2: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
Step 3: In a separate medium bowl, whisk together the olive oil, eggs, milk, lemon zest, and fresh lemon juice until smooth.
Step 4: Pour the wet ingredients into the dry ingredients and mix with a whisk or spatula until just combined. Do not overmix. Gently fold in the chopped dates and pistachios.
Step 5: Pour the batter into the prepared cake pan. You may sprinkle a few extra chopped pistachios on top if desired.
Step 6: Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean and the top is golden brown.
Step 7: Remove from the oven and let cool in the pan for 10-15 minutes before inverting onto a wire rack to cool completely.
Notes
For an extra burst of lemon flavor, consider making a simple lemon glaze by mixing 1/2 cup powdered sugar with 1-2 tablespoons of fresh lemon juice, then drizzle over the cooled cake. This cake stores well at room temperature in an airtight container for up to 3 days, or in the refrigerator for up to a week.
