2 lbs boneless, skinless chicken breasts
8 cups chicken broth
1 (10.5 oz) can condensed cream of chicken soup
1 cup milk (whole or 2%)
2 cups egg noodles (medium or wide)
2 large carrots, chopped
2 celery stalks, chopped
1 medium yellow onion, chopped
3 cloves garlic, minced
1 tsp dried thyme
1 bay leaf
1 tsp salt, or to taste
1/2 tsp black pepper, or to taste
2 tbsp cornstarch, optional (for thickening)
2 tbsp cold water, optional (for slurry)
Fresh parsley, chopped (for garnish)

Instructions

Step 1: Place the chicken breasts at the bottom of a large slow cooker.
Step 2: Add the chopped carrots, celery, onion, and minced garlic over the chicken.
Step 3: Pour in the chicken broth, condensed cream of chicken soup, milk, dried thyme, bay leaf, salt, and pepper. Stir gently to combine all ingredients.
Step 4: Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is cooked through and very tender.
Step 5: Carefully remove the cooked chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the pot.
Step 6: If desired, prepare a cornstarch slurry by whisking together the cornstarch and cold water until smooth. Stir the slurry into the soup to thicken it. (This step is optional if you prefer a thinner consistency).
Step 7: Add the egg noodles to the slow cooker. Cook on HIGH for an additional 30-60 minutes, or until the noodles are tender to your liking. Keep an eye on them to prevent overcooking.
Step 8: Remove and discard the bay leaf. Taste the soup and adjust seasonings if necessary.
Step 9: Ladle into bowls, garnish with fresh parsley if desired, and serve hot.

Notes

For best results, do not add the egg noodles at the beginning of the cooking process; they will become mushy. Adding them in the last 30-60 minutes ensures perfect texture. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 3 months. If freezing, consider adding fresh noodles after reheating for optimal texture.
