2 lbs boneless, skinless chicken breasts or thighs
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can corn, drained
1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
1 (8 oz) can tomato sauce
1 medium onion, chopped
3 cloves garlic, minced
1 packet (1 oz) taco seasoning mix
1 tsp cumin
1 tsp chili powder
1/2 tsp smoked paprika
1/4 cup chicken broth (optional, for moisture)
Salt and black pepper to taste
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)

Instructions

Step 1: Place the chicken breasts or thighs at the bottom of your crockpot.
Step 2: In a medium bowl, combine the black beans, corn, Rotel diced tomatoes, tomato sauce, chopped onion, minced garlic, taco seasoning, cumin, chili powder, and smoked paprika. Stir well to combine.
Step 3: Pour the bean and spice mixture evenly over the chicken in the crockpot. If desired, add 1/4 cup of chicken broth for extra moisture, especially if using leaner chicken breasts.
Step 4: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and very tender.
Step 5: Once cooked, carefully remove the chicken from the crockpot and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces.
Step 6: Return the shredded chicken to the crockpot and stir it into the sauce, ensuring all the chicken is coated. Season with salt and pepper to taste.
Step 7: Serve hot, garnished with fresh cilantro and lime wedges, as desired.
