Instructions

Step 1: Begin by preparing the tofu. Press the extra-firm tofu for at least 30 minutes to remove as much water as possible. This is crucial for achieving crispiness. After pressing, cut the tofu into small, uniform 1/2-inch cubes.
Step 2: In a medium bowl, whisk together the ingredients for the crispy tofu marinade: soy sauce, lime juice, olive oil, smoked paprika, chili powder, garlic powder, onion powder, salt, and black pepper. Add the tofu cubes to the marinade and gently toss to ensure all pieces are evenly coated. Let the tofu marinate for at least 15-30 minutes, or refrigerate for up to 4 hours for deeper flavor.
Step 3: While the tofu is marinating, prepare the zesty slaw. In a separate bowl, combine the shredded cabbage, chopped fresh cilantro, and diced red onion. In a small bowl, whisk together the lime juice, olive oil, sugar (or agave), salt, and pepper for the dressing. Pour the dressing over the slaw mixture and toss well to combine. Set aside.

Step 6: While the tofu is cooking, warm your corn tortillas. You can do this by placing them in a dry skillet over medium heat for 20-30 seconds per side until pliable, directly over a gas flame for a few seconds per side, or wrapped in a damp paper towel and microwaved for about 30 seconds.
