2 tbsp olive oil
2 shallots, finely minced
3 cloves garlic, minced
12 oz (340g) cremini mushrooms, sliced
1.5 cups heavy cream
1 cup grated Parmesan cheese, plus more for serving
1-2 tsp black truffle oil (or truffle paste, to taste)
Salt and freshly ground black pepper to taste
1/4 cup fresh parsley or chives, chopped (for garnish)
Reserved pasta water (approx. 1-1.5 cups)

Instructions

Step 1: Cook the Mafaldine Pasta. Bring a large pot of generously salted water to a rolling boil. Add the mafaldine pasta and cook according to package directions until al dente. Before draining, reserve about 1 to 1.5 cups of the starchy pasta water. Drain the pasta and set aside.
Step 2: Sauté Shallots and Garlic. While the pasta cooks, heat the olive oil in a large skillet or deep pan over medium heat. Add the minced shallots and cook until softened and translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
Step 3: Cook the Mushrooms. Add the sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until they release their moisture, brown, and become tender. Season with a pinch of salt and freshly ground black pepper.
Step 4: Prepare the Cream Sauce. Pour the heavy cream into the skillet with the mushrooms. Bring to a gentle simmer and let it bubble for 1-2 minutes to thicken slightly. Reduce the heat to low. Stir in 1 cup of grated Parmesan cheese until it melts into a smooth, velvety sauce. Remove the pan from the heat and stir in the black truffle oil or paste. Taste the sauce and adjust seasoning as needed.
Step 5: Combine Pasta and Sauce. Add the cooked mafaldine pasta directly into the skillet with the creamy truffle and mushroom sauce. Toss everything together using tongs, ensuring every strand of pasta is thoroughly coated. If the sauce appears too thick, gradually add splashes of the reserved pasta water until you achieve your desired creamy consistency.
