3-4 cups cooked chicken, shredded or diced
4 tbsp unsalted butter
1 medium yellow onion, diced
3 cloves garlic, minced
1/4 cup all-purpose flour
2 cups chicken broth
2 cups whole milk
4 oz (113g) cream cheese, softened
2 cups shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1 tsp salt, or to taste
1/2 tsp black pepper, or to taste
1/2 tsp paprika
1/2 cup breadcrumbs (Panko or regular)
2 tbsp melted butter (for topping)
Fresh parsley, chopped (for garnish, optional)

Instructions

Step 1: Preheat your oven to 375°F (190°C). Cook the spaghetti according to package directions until al dente. Drain well and set aside.
Step 2: While the spaghetti cooks, shred or dice your cooked chicken into bite-sized pieces. Set aside.
Step 3: In a large pot or Dutch oven, melt 4 tablespoons of butter over medium heat. Add the diced onion and cook until softened and translucent, about 5-7 minutes.
Step 4: Stir in the minced garlic and cook for another minute until fragrant. Be careful not to let the garlic brown.
