Instructions
Step 1: Prepare your avocados. Carefully slice the avocados in half lengthwise, twist them apart, and remove the pit. The safest way to remove the pit is to gently tap a sharp knife into the pit, twist, and lift it out. Using a spoon, scoop the creamy flesh into a medium-sized mixing bowl. Ensure your avocados are perfectly ripe; they should yield slightly to a gentle squeeze.
Step 2: Mash the avocado. Use a fork or a potato masher to mash the avocado to your desired consistency. For this creamy dip, I aim for mostly smooth with a few small lumps for texture and character. Avoid using a food processor for too long, as it can make the dip too watery and lose its desirable texture, which is crucial for many avocado recipes.
Step 3: Add the aromatics and flavorings. Finely chop your fresh cilantro, mince the red onion, and press or finely mince the garlic clove. If you need to store it, the trick is to press plastic wrap directly onto the surface of the dip, eliminating any air exposure which causes browning.
