Instructions
Step 1: In a medium saucepan, combine the milk, sugar, and a pinch of salt. Place over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Do not let it come to a rolling boil.
Step 2: Once simmering, slowly and gradually whisk in the Cream of Wheat. It's crucial to add it slowly while continuously whisking to prevent lumps. Continue whisking for about a minute until the mixture begins to thicken.
Step 3: Reduce the heat to low. Continue to cook, stirring frequently (every 30-60 seconds), for about 10-15 minutes, or until the cream of wheat has thickened to a pudding-like consistency. The frequency of stirring prevents sticking to the bottom and ensures even cooking.
Step 4: Remove the saucepan from the heat. Stir in the vanilla extract. If using, you can also stir in a tablespoon of butter at this point for extra richness.
Step 5: Ladle the warm cream of wheat pudding into individual serving bowls. Top generously with your fresh mixed berries. A drizzle of maple syrup or honey can be added for extra sweetness, if desired.
Step 6: Serve immediately and enjoy. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, you might need to add a splash of milk to loosen it up.
Notes
For an even richer flavor, infuse the milk with a vanilla bean pod while simmering, then remove before adding the Cream of Wheat. You can also experiment with different types of milk, such as almond or oat milk, for a dairy-free version, though the texture may vary slightly.
