1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can black-eyed peas, rinsed and drained
2 cups fresh or frozen (thawed) corn kernels
1 red bell pepper, finely diced
1 yellow bell pepper, finely diced
1/2 red onion, finely diced
1/2 cup chopped fresh cilantro
2 cloves garlic, minced
1/4 cup extra virgin olive oil
3 tablespoons apple cider vinegar
2 tablespoons fresh lime juice
1 tablespoon honey or maple syrup (optional, for sweetness)
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
Salt and freshly ground black pepper to taste

Instructions

Step 1: Rinse and drain the black beans and black-eyed peas thoroughly. If using frozen corn, ensure it is thawed and drained. If using fresh corn, cut the kernels from the cob.
Step 2: In a large mixing bowl, combine the rinsed black beans, black-eyed peas, corn kernels, finely diced red bell pepper, yellow bell pepper, and red onion.
Step 3: Add the chopped fresh cilantro and minced garlic to the vegetable mixture in the bowl.
Step 4: In a separate small bowl or jar, whisk together the extra virgin olive oil, apple cider vinegar, fresh lime juice, and honey (or maple syrup, if using).
Step 5: Stir in the ground cumin, chili powder, salt, and black pepper into the dressing until well combined. Taste the dressing and adjust seasonings as desired.
Step 6: Pour the prepared dressing over the bean and vegetable mixture in the large bowl. Toss gently but thoroughly to ensure all ingredients are evenly coated with the dressing.
Step 7: Cover the bowl and refrigerate the cowboy caviar for at least 30 minutes to allow the flavors to meld and deepen. For best results, chill for 2-4 hours before serving.

Notes

For best flavor, make the cowboy caviar a few hours ahead of time and allow it to chill in the refrigerator. This gives the flavors time to meld. You can adjust the sweetness by adding more or less honey/maple syrup. For an extra kick, add finely diced jalapeño.
