A high-protein, velvety smooth pasta sauce made with blended cottage cheese, garlic, and nutritional yeast. The perfect healthy alternative to Alfredo sauce.

Ingredients

16 oz full-fat cottage cheese (4% milkfat)
1/4 cup freshly grated Parmesan cheese
2 tablespoons nutritional yeast
2 cloves garlic, minced
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup reserved pasta water
1 lb of your favorite pasta (cooked)
Fresh parsley for garnish

Instructions

Step 1: Place the cottage cheese, Parmesan cheese, nutritional yeast, minced garlic, salt, and pepper into a high-speed blender or food processor.
Step 2: Blend on high for 60-90 seconds until the mixture is completely smooth and no curds remain.
Step 3: Cook your pasta in salted water according to package directions, making sure to reserve at least 1/2 cup of the starchy pasta water before draining.
Step 4: Return the drained pasta to the pot over low heat. Pour the blended cottage cheese mixture over the pasta.
Step 5: Gradually add the reserved pasta water, one tablespoon at a time, tossing constantly until the sauce reaches your desired creamy consistency.
Step 6: Remove from heat immediately once warmed through. Garnish with fresh parsley and extra black pepper before serving.

Notes

Do not boil the sauce after adding it to the pasta, as the high heat may cause the cottage cheese to separate and become grainy.
