Ingredients
1 cup (226g) cottage cheese (full-fat or low-fat)
1 large egg
1/4 cup cherry tomatoes, halved
1/4 cup cucumber, diced
2 tablespoons fresh dill, chopped
1 tablespoon extra virgin olive oil
Salt and black pepper to taste
Optional: a pinch of red pepper flakes
Optional: 1-2 slices of whole-wheat toast, for serving
Instructions
Step 1: Prepare the egg. Heat a small non-stick pan over medium heat. Add a splash of olive oil or butter if desired. Crack the egg into the pan and cook to your preference (fried, poached, or scrambled). For a perfectly fried egg, cook until the whites are set and the yolk is still runny, about 2-3 minutes.
Step 2: Assemble the bowl. While the egg is cooking, spoon the cottage cheese into a serving bowl.
Step 3: Add fresh ingredients. Arrange the halved cherry tomatoes and diced cucumber around or on top of the cottage cheese.
Step 4: Season and garnish. Drizzle the extra virgin olive oil over the cottage cheese and vegetables. Sprinkle generously with fresh chopped dill, salt, black pepper, and a pinch of red pepper flakes if using.
Step 5: Finish with the egg. Carefully place the cooked egg on top of the vegetables and cottage cheese.
Step 6: Serve immediately. Enjoy your vibrant and nutritious Savory Cottage Cheese Power Bowl on its own or with a side of whole-wheat toast. This is one of the quickest and most satisfying cottage cheese breakfast recipes!
