Ingredients
4 ears fresh corn on the cob, husked and silked
2 tbsp unsalted butter, melted (or avocado oil for dairy-free)
1 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp garlic powder
1/4 tsp onion powder
1/2 tsp salt, or to taste
1/4 tsp black pepper, or to taste
Fresh cilantro or parsley, chopped (for garnish)
Lime wedges (for serving)
Instructions
Step 1: Prepare the corn by shucking and removing all silk. Trim off the ends for easier handling.
Step 2: Carefully stand each ear of corn upright on a sturdy cutting board. Using a large, sharp chef’s knife, slice each ear lengthwise through the center, cutting directly through the cob. Take extreme caution during this step.
Step 3: Lay each corn half cut-side down. Slice each half lengthwise again, creating four 'ribs' from each ear of corn. The corn will naturally curl into a 'rib' shape as it cooks.
Step 4: In a large bowl, whisk together the melted butter (or avocado oil), smoked paprika, chili powder, garlic powder, onion powder, salt, and black pepper.
Step 5: Add the cut corn ribs to the bowl and toss thoroughly until every piece is evenly coated with the seasoning mixture.
Step 6: To air fry: Preheat air fryer to 375°F (190°C). Arrange corn ribs in a single layer in the basket (cook in batches if needed). Air fry for 10-15 minutes, shaking halfway through, until tender, slightly charred, and curled.
Step 7: To oven bake: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Spread corn ribs in a single layer. Bake for 20-25 minutes, flipping halfway, until tender and caramelized.
Step 8: To grill: Preheat grill to medium-high heat and lightly oil grates. Place corn ribs on grates and grill for 8-12 minutes, turning occasionally, until tender with char marks and curled.
Step 9: Remove cooked corn ribs. Garnish immediately with fresh cilantro or parsley and serve with lime wedges. Enjoy your delicious corn ribs!
Notes
For safe cutting, make sure your knife is very sharp and your cutting board is stable. A kitchen towel placed under the board can prevent slipping. The corn will naturally curl into a rib shape during cooking, which is part of the fun! Adjust spice levels to your preference.
