4 ears fresh corn on the cob, shucked
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Juice of 1 fresh lime
2 tablespoons fresh cilantro, chopped (for garnish)

Instructions

Step 1: Prepare the corn. Shuck the corn and remove all silk. Carefully trim off both ends of each cob to create flat, stable surfaces. Stand each cob upright on a cutting board. Using a very sharp, heavy chef's knife, carefully slice each cob in half lengthwise through the center. Lay each half flat side down and slice again lengthwise, creating four 'ribs' from each ear of corn. If cobs are very thick, you can slice each quarter into smaller pieces.
Step 2: Make the seasoning mix. In a large bowl, whisk together the olive oil, chili powder, smoked paprika, garlic powder, onion powder, salt, and black pepper until well combined.
Step 3: Season the corn ribs. Add the cut corn ribs to the bowl with the spice mixture. Toss thoroughly to ensure every piece of corn is evenly coated. Let sit for 5-10 minutes to allow flavors to meld.
Step 4: Cook using your preferred method:
Step 4a (Air Fryer): Preheat air fryer to 400°F (200°C). Arrange corn ribs in a single layer in the basket, working in batches if necessary. Air fry for 10-15 minutes, flipping halfway through, until corn is tender, slightly charred, and curled.
Step 4b (Oven): Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Spread corn ribs in a single layer. Bake for 20-25 minutes, flipping halfway, until tender and caramelized with curled edges.
Step 4c (Grill): Preheat grill to medium-high heat. Place corn ribs directly on grates. Grill for 8-12 minutes, turning every 2-3 minutes, until tender with char marks and curled edges.
Step 5: Finish and serve. Transfer cooked corn ribs to a serving platter. Immediately squeeze fresh lime juice over them and garnish with fresh chopped cilantro. Serve hot.

Notes

For the best results, use fresh, sweet corn. Be extremely careful when cutting the corn cobs; a sharp knife and a stable cutting board are essential. If you don't have an air fryer, the oven or grill methods yield equally delicious results. Adjust chili powder to your preferred spice level. A sprinkle of cotija cheese or a drizzle of crema can add an extra layer of deliciousness after cooking.
