Ingredients

4 ears of fresh sweet corn, husked
2 tablespoons avocado oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon chili powder
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Fresh cilantro and lime wedges for serving

Instructions

Step 1: Prepare the corn by cutting off the top and bottom ends to create a stable base for slicing.
Step 2: Stand the corn ear vertically and carefully slice it in half lengthwise using a sharp chef's knife.
Step 3: Lay the halves flat and slice them lengthwise again to create four long 'rib' strips from each ear of corn.
Step 4: In a small bowl, whisk together the avocado oil, smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper.
Step 5: Brush the spice mixture generously over the kernel side of each corn rib, ensuring even coverage.
Step 6: Preheat your air fryer to 400°F (200°C) and place the corn ribs in the basket in a single layer.
Step 7: Air fry for 12-15 minutes, shaking or flipping halfway through, until the corn ribs have curled and the edges are slightly charred.
Step 8: Remove from the air fryer and serve immediately with a squeeze of fresh lime and a sprinkle of chopped cilantro.

Notes

Ensure your knife is very sharp for safe cutting. If you don't have an air fryer, you can bake these in a 425°F oven for 20-25 minutes.
