Ingredients
8 oz Feta cheese (in brine preferred)
1 cup Full-fat plain Greek yogurt
1 tablespoon Fresh lemon juice
1 teaspoon Lemon zest
1/4 cup Fresh dill, finely chopped
2 tablespoons Fresh parsley, finely chopped
1 tablespoon Fresh mint, finely chopped
1/4 teaspoon Black pepper
1 tablespoon Extra virgin olive oil (for garnish)
Instructions
Step 1: Place the crumbled feta cheese into a food processor or a medium mixing bowl.
Step 2: Add the Greek yogurt, lemon juice, and lemon zest to the cheese.
Step 3: Pulse or mash with a fork until the desired consistency is reached (smooth or slightly chunky).
Step 4: Stir in the finely chopped dill, parsley, mint, and black pepper until well combined.
Step 5: Transfer the mixture to a serving bowl, cover, and refrigerate for at least one hour to let flavors meld.
Step 6: Just before serving, drizzle with extra virgin olive oil and garnish with a sprig of fresh herb.
Notes
Always use fresh herbs for the best flavor. If the dip is too thick, you can thin it with a teaspoon of water or additional lemon juice.
