Ingredients
10 fresh mint leaves
1/2 lime, cut into wedges
2 tablespoons cream of coconut
1 tablespoon simple syrup (optional, depending on sweetness preference)
1/2 cup club soda or sparkling water
Crushed ice
Lime wheel and mint sprig for garnish
Instructions
Step 1: Place the fresh mint leaves and lime wedges in a sturdy highball glass.
Step 2: Muddle the mint and lime gently to release the juices and aromatic oils without tearing the leaves.
Step 3: Add the cream of coconut and simple syrup to the glass.
Step 4: Fill the glass with crushed ice and stir well to combine the coconut mixture with the lime and mint.
Step 5: Top with club soda and stir gently once more. Garnish with a lime wheel and a fresh sprig of mint.
Notes
For a lighter version, use coconut water instead of cream of coconut. If you cannot find cream of coconut, use the thick part from the top of a can of coconut milk and add extra sweetener.
