8-10 fresh mint leaves
2-3 lime wedges (or 1 oz fresh lime juice)
1-2 tablespoons simple syrup (or to taste)
2-3 oz full-fat canned coconut milk

4-6 oz sparkling water or club soda
Optional garnishes: fresh mint sprig, lime wheel, shredded coconut
Instructions
Step 1: In a sturdy glass or cocktail shaker, add the fresh mint leaves and lime wedges.
Step 2: Gently muddle the mint and lime. Press firmly enough to bruise the mint and release lime juice, but avoid over-muddling which can make the mint bitter.
Step 3: Add the simple syrup and coconut milk to the glass or shaker.
Step 4: If using a shaker, add a handful of ice, secure the lid, and shake vigorously for 15-20 seconds until well-chilled and thoroughly combined. If using a glass, stir well with a spoon until the ingredients are fully mixed.
Step 5: Fill your serving glass with ice, then pour the coconut-lime-mint mixture over the ice.
Step 6: Top off the glass with sparkling water or club soda. Give it a gentle stir to combine.
Step 7: Garnish with a fresh mint sprig and a lime wheel or shredded coconut. Serve immediately and enjoy your delicious Coconut Mojito Mocktail!
Notes
For the best flavor, always use fresh mint and freshly squeezed lime juice. Adjust the amount of simple syrup to your preferred sweetness. You can make simple syrup by dissolving equal parts sugar in hot water, then chilling.
