1 large head romaine lettuce, torn into bite-sized pieces
1/2 head iceberg lettuce, torn into bite-sized pieces
1 pint cherry tomatoes, halved
1 large cucumber, thinly sliced
1/2 red onion, very thinly sliced
1/2 cup pitted Kalamata olives, halved or left whole
1/2 cup pepperoncinis, whole or sliced
1/2 cup grated Parmesan cheese, plus more for serving
For the Vinaigrette:
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon Dijon mustard
1/4 teaspoon red pepper flakes (optional, for a kick)
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Instructions
Step 1: In a large salad bowl, combine the torn romaine and iceberg lettuces. Ensure they are thoroughly washed and dried.
Step 2: Add the halved cherry tomatoes, thinly sliced cucumber, and very thinly sliced red onion to the bowl.
Step 3: Drain and add the pitted Kalamata olives and pepperoncinis to the vegetable mix.
Step 4: Prepare the vinaigrette: In a small bowl or jar, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, dried oregano, Dijon mustard, red pepper flakes (if using), salt, and black pepper until well emulsified.
Step 5: Just before serving, pour about half to two-thirds of the vinaigrette over the salad ingredients. Toss gently but thoroughly until all vegetables are lightly coated. Add more dressing if desired.
