1/2 cup old-fashioned rolled oats
1 tbsp chia seeds
1 tsp ground cinnamon (or more, to taste)
Pinch of salt
3/4 cup milk (dairy or non-dairy)
2 tbsp maple syrup (or preferred sweetener)
1/2 tsp vanilla extract
For the Cream Cheese Drizzle:
1 oz cream cheese, softened
1.5 tbsp powdered sugar
1-2 tbsp milk (dairy or non-dairy)

Instructions

Step 1: In a 16-ounce jar or airtight container, combine the rolled oats, chia seeds, ground cinnamon, and salt. Stir well to mix the dry ingredients.
Step 2: Add the milk, maple syrup, and vanilla extract to the oat mixture. Stir thoroughly until all ingredients are well combined and no dry spots remain. Ensure the chia seeds are fully submerged.
Step 3: Cover the jar tightly with a lid and refrigerate for at least 4 hours, or preferably overnight, to allow the oats to soften and the mixture to thicken.
Step 4: While the oats are chilling, prepare the cream cheese drizzle. In a small bowl, whisk together the softened cream cheese, powdered sugar, and 1 tablespoon of milk until smooth and creamy. If the mixture is too thick, add the remaining tablespoon of milk, a little at a time, until you reach a drizzle-able consistency.
Step 5: The next morning, remove the overnight oats from the refrigerator. Give them a good stir. If they are too thick, add a splash more milk until your desired consistency is reached.
Step 6: Drizzle the prepared cream cheese icing over the top of the cinnamon roll overnight oats. You can swirl it in gently with a spoon if desired. Serve cold and enjoy!

Notes

For best results, allow the oats to soak for at least 8 hours or overnight. Adjust sweetness and cinnamon to your personal preference. To make this recipe vegan, use plant-based milk and a dairy-free cream cheese alternative.
