1 lb boneless, skinless chicken breast, thinly sliced
2 tbsp soy sauce (divided)
2 tsp cornstarch (divided)
1/2 tsp sesame oil
2 tbsp vegetable oil (divided)
1 medium onion, thinly sliced
2 celery stalks, thinly sliced
2 carrots, julienned or thinly sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
3 cloves garlic, minced
1 inch ginger, grated
1 cup chicken broth
1 tbsp oyster sauce (optional, for richer flavor)
1 tsp sugar
4 oz fresh bean sprouts
3 green onions, chopped
Cooked rice or crispy chow mein noodles, for serving
Instructions
Step 1: Prepare the chicken. In a medium bowl, combine the chicken strips with 1 tablespoon of soy sauce, 1 teaspoon of cornstarch, and 1/2 teaspoon of sesame oil. Toss to coat evenly and let it marinate for at least 10 minutes while you prepare your other ingredients.
Step 2: While the chicken marinates, prepare all your vegetables. Slice the onion, bell peppers, celery, and carrots into thin strips or julienne them. Mince your garlic and ginger. Have your broth, remaining soy sauce, oyster sauce (if using), sugar, and remaining cornstarch whisked together in a separate bowl to create your Chop Suey Recipe sauce.
Step 3: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat until shimmering. Add the marinated chicken strips and stir-fry for 3-5 minutes, or until cooked through and lightly browned. Remove the chicken from the wok and set aside, leaving any residual oil in the pan.

Step 5: Add the sliced bell peppers, minced garlic, and grated ginger to the wok. Continue to stir-fry for another 2-3 minutes until fragrant and the bell peppers are tender-crisp.
Step 6: Give your prepared sauce mixture a quick whisk again, then pour it into the wok with the vegetables. Bring the sauce to a simmer, stirring constantly, until it thickens to your desired consistency.
Step 7: Return the cooked chicken to the wok with the thickened sauce and vegetables. Add the fresh bean sprouts and green onions. Toss everything together gently to combine and heat through for just 1-2 minutes.
