2 (3.9 ounce) packages instant chocolate pudding mix
4 cups cold milk (whole milk recommended)
1 (8 ounce) container frozen whipped topping, thawed (for topping)

Instructions

Step 1: Prepare the Pecan Crust. In a medium bowl, combine the finely chopped pecans and melted butter. Press this mixture firmly and evenly into the bottom of a 9x13 inch baking dish. For best results, use the bottom of a measuring cup or a flat-bottomed glass to really compact the crust. Place the dish in the refrigerator to chill while you prepare the next layer.
Step 2: Create the Cream Cheese Layer. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and continue to beat until well combined and fluffy. Gently fold in half of the thawed whipped topping (approximately 1 cup) until no streaks remain. Spread this cream cheese mixture evenly over the chilled pecan crust. Return the dish to the refrigerator.
Step 3: Mix the Chocolate Pudding Layer. In another large mixing bowl, whisk together the two packages of instant chocolate pudding mix and the cold milk for about 2-3 minutes, or until the mixture begins to thicken. It’s important to use cold milk as this helps the pudding set properly. Allow the pudding to sit for 5 minutes to thicken further. Once thickened, carefully spread the chocolate pudding layer over the cream cheese layer. Ensure an even coating.
Step 4: Top with Whipped Cream. Gently spread the remaining 1 (8 ounce) container of thawed whipped topping (or 2 cups of freshly made whipped cream) over the chocolate pudding layer, creating a smooth, inviting white top. You can use a spatula to create lovely swirls or peaks if desired.
Step 5: Chill Thoroughly. Cover the baking dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. Chilling allows all the layers to set firmly and for the flavors to meld beautifully. The longer it chills, the easier it will be to slice and serve.
