1 large yellow onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
2 tbsp chili powder
1 tbsp ground cumin
1 tsp smoked paprika
1/2 tsp unsweetened cocoa powder
1 can (28 oz) crushed tomatoes
2 cans (15 oz each) dark red kidney beans, drained and rinsed
1 cup beef broth
1 tsp salt
1/2 tsp black pepper
2 tbsp tomato paste

Instructions

Step 1: In a large Dutch oven or heavy pot, brown the ground beef over medium-high heat until fully cooked. Drain excess grease but leave about a tablespoon in the pot for flavor.
Step 2: Add the diced onion and bell pepper to the pot. Sauté for 5-7 minutes until the vegetables are softened and the onions are translucent.
Step 3: Stir in the minced garlic and tomato paste. Cook for 1-2 minutes until the garlic is fragrant and the tomato paste has darkened slightly.
Step 4: Add the chili powder, cumin, smoked paprika, and cocoa powder. Stir constantly for 1 minute to bloom the spices and incorporate them into this Chili recipe base.
Step 5: Pour in the crushed tomatoes, beef broth, and kidney beans. Season with salt and pepper. Stir well to combine all ingredients.
