A lightning-fast, incredibly flavorful Chili Crisp Noodles Recipe that brings together chewy noodles with a punchy, umami-rich sauce, perfect for busy weeknights.

  • Total Time: 15 minutes
  • Yield: 2 servings 1x

Ingredients

Scale

2 servings (approx. 140-150g) noodles (ramen, udon, spaghetti, or linguine)
3-4 tablespoons chili crisp (adjust to taste)
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon sugar (or maple syrup)
2 cloves garlic, minced
1/2 inch fresh ginger, grated (optional)
2 green onions, chopped (for garnish)
1 teaspoon toasted sesame seeds (for garnish, optional)
Reserved noodle water (about 1/2 cup)

Instructions

Step 1: Cook Your Noodles. Bring a large pot of salted water to a rolling boil. Add your chosen noodles and cook according to package directions until al dente. Before draining, reserve about 1/2 cup of the starchy noodle water. Drain the noodles well and set aside.
Step 2: Prepare the Sauce. In a medium bowl, combine the chili crisp, soy sauce, rice vinegar, sesame oil, sugar, minced garlic, and grated ginger (if using). Whisk everything together until the sugar is dissolved and the sauce is well combined.
Step 3: Combine Noodles and Sauce. Immediately add the hot, drained noodles to the bowl with the prepared sauce. Toss thoroughly, ensuring every strand of noodle is coated. If the sauce seems too thick, add 1-3 tablespoons of the reserved noodle water, a little at a time, until it reaches your desired consistency.
Step 4: Garnish and Serve. Transfer the Chili Crisp Noodles to serving bowls. Garnish generously with chopped green onions and a sprinkle of toasted sesame seeds. Serve immediately and enjoy your quick, delicious Chili Crisp Noodles Recipe!

Notes

Feel free to add your favorite cooked protein like tofu, chicken, or a fried egg, and incorporate extra vegetables such as steamed bok choy or shredded carrots for a more complete meal. Adjust the amount of chili crisp to suit your spice preference.
