1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
2 medium zucchini, sliced into half-moons (about 1/4 to 1/2 inch thick)
2 tablespoons olive oil
3 cloves garlic, minced
1 lemon, juiced and zested
1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)
1 teaspoon dried thyme (or 1 tablespoon fresh, chopped)
1/2 teaspoon dried oregano (or 1.5 teaspoons fresh, chopped)
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Fresh parsley or basil, chopped, for garnish (optional)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, combine the cut chicken pieces and zucchini slices.
Step 3: Add the olive oil, minced garlic, lemon juice, lemon zest, dried rosemary, dried thyme, dried oregano, salt, and black pepper to the bowl. Toss everything together until the chicken and zucchini are evenly coated with the seasonings.
Step 4: Spread the seasoned chicken and zucchini in a single layer on the prepared baking sheet. Ensure there is enough space between pieces to allow for proper roasting and browning, not steaming. If your baking sheet is too crowded, use a second one.
Step 5: Roast for 20-25 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F / 74°C) and the zucchini is tender-crisp with slight caramelization. For even cooking, you can gently toss the ingredients halfway through the baking time.
Step 6: Remove the baking sheet from the oven. Let the dish rest for a few minutes before serving to allow the chicken juices to redistribute, ensuring it stays moist and tender.
Step 7: Garnish with fresh chopped parsley or basil, if desired, and serve immediately.

Notes

For best results, do not overcrowd the baking sheet. Use two if necessary to ensure vegetables roast rather than steam. Leftovers can be stored in an airtight container for up to 3-4 days in the refrigerator.
