1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
2 medium zucchini, cut into 1/2-inch half-moons
2 tbsp olive oil
Juice of 1 large lemon
Zest of 1 large lemon
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp dried basil
1/2 tsp salt, or to taste
1/4 tsp black pepper, or to taste
Fresh parsley, chopped, for garnish (optional)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large mixing bowl, combine the diced chicken breast, sliced zucchini, olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, dried basil, salt, and black pepper. Toss gently until all ingredients are evenly coated.
Step 3: Spread the chicken and zucchini mixture in a single layer on the prepared baking sheet. Ensure pieces are not overcrowded to allow for proper roasting and browning. If necessary, use two baking sheets.
Step 4: Roast in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the zucchini is tender-crisp and slightly caramelized. For even cooking and browning, you can gently flip the chicken and zucchini halfway through the cooking time.
Step 5: Remove the baking sheet from the oven. Garnish with fresh chopped parsley, if desired, for a burst of color and fresh flavor. Serve immediately and enjoy your delicious one-pan meal.

Notes

For best results, avoid overcrowding the baking sheet to ensure the chicken and zucchini roast rather than steam. If you prefer a little heat, add a pinch of red pepper flakes with the herbs. Leftovers store well in an airtight container for up to 3 days.
