Ingredients
4 bone-in, skin-on chicken thighs
1 tsp kosher salt
1/2 tsp black pepper
4 tbsp unsalted butter
8 cloves garlic, smashed
1 tbsp olive oil
Fresh parsley for garnish
1 tsp dried thyme
Instructions
Step 1: Pat the chicken thighs dry with paper towels and season both sides with salt, pepper, and dried thyme.
Step 2: Heat olive oil in a large skillet over medium-high heat. Place chicken skin-side down and cook for 8-10 minutes until the skin is deep golden brown.
Step 3: Flip the chicken and add the butter and smashed garlic cloves to the skillet.
Step 4: Baste the chicken with the melting garlic butter for another 10-12 minutes or until the internal temperature reaches 165°F.
Step 5: Remove from heat, let rest for 5 minutes, and garnish with fresh parsley before serving.
Notes
Always use a meat thermometer to ensure the chicken is cooked through but still juicy.
