A quick and elegant chicken caprese recipe featuring perfectly seared chicken breasts topped with fresh mozzarella, ripe tomatoes, and fragrant basil, finished with a drizzle of balsamic glaze. A delicious taste of Italy in under 40 minutes!

4 boneless, skinless chicken breasts (about 6-8 oz each), pounded to 3/4-inch thickness if very thick
1 tablespoon olive oil, plus more for drizzling
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
1/2 teaspoon garlic powder
1 pint cherry or grape tomatoes, halved
8 oz fresh mozzarella, sliced or cubed (bocconcini works great)
1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
2-3 tablespoons balsamic glaze, for drizzling

Instructions

Step 1: Pat chicken breasts dry with paper towels. Season generously on both sides with salt, black pepper, and garlic powder.
Step 2: Heat 1 tablespoon olive oil in a large oven-safe skillet (cast iron or stainless steel recommended) over medium-high heat until shimmering.
Step 3: Carefully place seasoned chicken breasts in the hot pan. Sear for 4-5 minutes per side, until golden brown and a crust has formed.
Step 4: Remove seared chicken from the skillet and set aside on a plate.
Step 5: Arrange the halved cherry or grape tomatoes around the chicken in the skillet. Drizzle tomatoes lightly with a little more olive oil and season with a pinch of salt and pepper.
Step 6: Place fresh mozzarella slices or cubes directly on top of each seared chicken breast. Sprinkle a few fresh basil leaves over the tomatoes and chicken.
Step 7: Transfer the skillet to a preheated oven (375°F / 190°C). Bake for 10-15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F / 74°C) and the mozzarella is melted and bubbly.
Step 8: Remove from oven. Garnish generously with additional fresh basil leaves and a drizzle of balsamic glaze. Serve immediately.

Notes

For the best flavor, use high-quality fresh mozzarella and ripe, in-season tomatoes. A good store-bought balsamic glaze works wonderfully, or you can reduce balsamic vinegar yourself on the stovetop until thickened.
