Ingredients
4 boneless skinless chicken breasts, pounded to even thickness
2 tablespoons extra-virgin olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon dried Italian seasoning
3 cloves garlic, minced
1 cup cherry tomatoes, halved
8 oz fresh mozzarella cheese, sliced into rounds
1/4 cup balsamic glaze
1/4 cup fresh basil leaves, torn
Instructions
Step 1: Season the chicken breasts on both sides with salt, pepper, and Italian seasoning to ensure every bite of the chicken caprese recipe is flavorful.
Step 2: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5-6 minutes per side until golden brown and fully cooked (internal temperature of 165°F).
Step 3: During the last 3 minutes of cooking, add the minced garlic and halved cherry tomatoes to the skillet, stirring them around the chicken until the tomatoes begin to soften and blister.
Step 4: Place the mozzarella slices on top of each chicken breast. Cover the skillet with a lid for 1-2 minutes until the cheese is melted and gooey.
Step 5: Remove the skillet from heat. Drizzle the balsamic glaze over the chicken and garnish with a generous amount of fresh torn basil before serving.
Notes
For the best results in this chicken caprese recipe, use a heavy-bottomed skillet like cast iron to get a superior sear on the meat.
