2 large boneless, skinless chicken breasts (about 1 lb total), cooked and shredded or diced
4 large (10-12 inch) flour tortillas
4 cups chopped romaine lettuce
1/2 cup Caesar dressing (store-bought or homemade)
1/4 cup grated Parmesan cheese, plus extra for garnish
1/2 cup croutons, crushed lightly (optional, for extra crunch)
Salt and freshly ground black pepper to taste
1 tsp olive oil (for cooking chicken, if needed)
Garlic powder (for seasoning chicken, if needed)

Instructions

Step 1: Prepare the Chicken. If not using leftover rotisserie chicken, season chicken breasts with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium-high heat and cook chicken for 4-6 minutes per side, until fully cooked through and no longer pink. Let cool slightly, then shred or dice.
Step 2: Prepare the Other Ingredients. While the chicken cools, chop the romaine lettuce and have your Caesar dressing, Parmesan cheese, and croutons ready. Warm the tortillas slightly in the microwave for 10-15 seconds each, or in a dry skillet over low heat for 15-20 seconds per side, to make them more pliable.
Step 3: Assemble the Wraps. Lay one warmed tortilla flat on a clean surface. Spread about 2 tablespoons of Caesar dressing evenly over the center of the tortilla, leaving a border around the edges.
Step 4: Add Fillings. Layer about 1 cup of chopped romaine lettuce over the dressing. Top with a quarter of the cooked chicken, 1 tablespoon of grated Parmesan cheese, and a sprinkle of crushed croutons (if using). Season lightly with a pinch of salt and pepper.
